- 10 chocolate biscuits
- 1/2teaspoons vanilla extract
- 2tablespoons cornflour
- 210grams dark chocolate, chopped (curl 10g to serve)
- 1 1/4 cup milk
- 1/4 cup sugar
- 30grams butter
- 1/2teaspoons peppermint essence
- 2tablespoons mint leaves (to serve)
- 300milliliter pure cream
- 1tablespoons cocoa

Method
Step 1 of 3
Place sugar, cornflour and cocoa in a medium saucepan over medium heat. Add cream, milk, vanilla and whisk constantly for 5 minutes or until mixture is smooth and thick.
Step 2 of 3
Reduce heat to low. Add chocolate, butter and essence and whisk until melted. Pour mixture into 6 serving glasses or cups. Chill for 30 minutes.
Step 3 of 3
Crush biscuits to fine crumbs, then spoon 1 tbs over each pudding. Garnish with mint and chocolate curls. Serve.
