  • 40grams butter
  • 2 bananas, peeled and sliced
  • 6 anzac biscuits, roughly crushed
  • 1 cup cream
  • 1/4 cup golden syrup
  • 1/2 cup pecans, toasted, chopped
  • 12 scoops vanilla ice-cream
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk

Method

Step 1 of 3

Place butter, sugar, condensed milk and golden syrup into a small saucepan and stir over low heat until sugar has dissolved. Bring to the boil and cook for 5 mins or until the mixture is golden. Stir in cream until smooth and cook for 1-2 mins or until it has thickened. Cool slightly.

Step 2 of 3

Divide crushed biscuits into the base of 6 tall dessert glasses. Top with banana slices, a scoop of ice-cream, toasted pecans and caramel sauce.

Step 3 of 3

Top with another scoop of ice-cream and more caramel sauce and decorate with pecans.
