  • 1/2 cup mini dark choc chips
  • 2tablespoons milk
  • 2L vanilla ice cream, softened
  • 125grams unsalted butter, softened
  • 1teaspoons vanilla extract
  • 100grams dark chocolate
  • 24 wafers
  • 1/2 cup brown sugar
  • 1/2 cup caster sugar
  • 100grams pistachios, crushed

Method

Step 1 of 5

Beat butter and sugars in a bowl until smooth. Beat in milk and vanilla. Stir in flour and choc chips.

Step 2 of 5

Scoop teaspoonfuls of dough into balls and place on a tray. Freeze for 30 minutes until firm.

Step 3 of 5

Stir dough through ice-cream. Freeze for 4 hours until firm. Meanwhile, melt chocolate in a microwave on HIGH (100%) for 1 minute. Stir until smooth.

Step 4 of 5

Dip wafer corners into melted chocolate and sprinkle over pistachio. Leave to set.

Step 5 of 5

Cut ice-cream into wafer-size slices. Serve sandwiched between choc-coated wafers.
