  • 2tablespoons butter
  • 1/4 cup milk, warmed
  • 1/2 cup milk
  • 1/2 cup sugar
  • 2 cup pure icing sugar
  • 1 chocolate flake bar, crushed (to serve)
  • 1/3 cup cocoa
  • 1 egg, beaten
  • 1L vegetable oil (for deep frying)
  • 1teaspoons salt

Method

Step 1 of 5

Sift flour, sugar, baking powder, salt and mixed spice together into a bowl. In a separate bowl, whisk milk, butter and egg together. Pour into flour mixture and stir to combine. Turn out onto a floured surface and lightly knead until smooth.

Pat dough out until 6mm thick. Cut out rounds using a 8cm cutter. Then use a 3cm cutter to cut out holes in rounds.

Heat oil in deep saucepan. Place a wire rack over a tray. Carefully lower doughnuts, a few at a time, into hot oil. Fry, turning once, for 3 -4 minutes or until golden brown. Drain on wire rack and leave to cool before glazing.

To make glaze, sift icing sugar and cocoa together. Whisk in milk and vanilla and stir until smooth. Dip doughnuts into glaze and leave to set.

Decorate with crushed chocolate. Serve.
