  • 1/2 cup honey
  • 1 cup pure cream
  • 12 dutch wafer biscuits
  • 2 cup vanilla custard
  • 1/2 cup crunchy peanut butter

Method

Step 1 of 4

Line base and sides of a 18x28cm shallow pan with 2 layers of plastic wrap.

Step 2 of 4

Place peanut butter and honey in the bowl of an electric mixer and whisk until well combined. Add custard to mixture and whisk to combine and loosen mixture. Add cream and whisk on high until firm peaks form.

Step 3 of 4

Pour ice-cream mixture into prepared pan and smooth top. Freeze ice-cream for 2 hours or until just set. Cover with plastic wrap and freeze a further 4 hours or until completely set.

Step 4 of 4

Turn ice-cream out of pan onto a clean work surface. Using an 8cm round cutter cut out 6 rounds. Roll sides in grated chocolate to coat. Sandwich between 2 wafers. Return to freezer until ready to serve.
