Description
Vanilla infuses this popcorn recipe with subtle, natural sweetness and flaked almonds and coconut get slightly toasty added at the end of cooking.
Method
Step 1 of 4
Heat the coconut oil and vanilla in a large, deep pan on a medium high heat. Add 2-3 kernels to the pan and once they begin to pop, add the remaining kernels in a single layer to the pan.
Step 2 of 4
Cover the pan with a lid and shake well to coat all the kernels with oil.
Step 3 of 4
Leave on the heat until the kernels start to pop, shake well every 30 seconds or so to prevent burning and evenly cook the kernels. Once the popping slows down after 6-7 minutes, remove from the heat.
Step 4 of 4
Stir in the coconut flakes and flaked almonds a shake with the lid on to coat well. Leave to stand for 1 minute and serve warm.
