  • 1200milliliter thickened cream (2 tubs)
  • 2 cup milk
  • 2teaspoons vanilla extract
  • 200grams dark chocolate 70% cocoa, roughly chopped
  • 8 waffle cones
  • 1/2 cup instant coffee & milk
  • 100grams marshmallows
  • 2/3 cup caster sugar

Method

Step 1 of 5

Place milk, sugar and vanilla in a medium saucepan and stir over medium heat until sugar dissolves. Remove from heat and set aside to cool.

Step 2 of 5

Reserve 1/2 cup cream and stir remainder into cooled milk. Pour mixture into 2 x 6-cup capacity loaf pans or 1 large deep pan. Freeze for at least 5 hours or overnight until set.

Step 3 of 5

Stir reserved cream, chocolate, marshmallows and coffee and milk in a medium saucepan over medium heat until it’s a thick, smooth sauce.

Step 4 of 5

Scoop set ice-cream into a food processor and process until smooth. Return half the mixture to pans. Dollop with chocolate-fudge sauce and swirl through using a knife. Top with remaining ice-cream and repeat with remaining sauce. Return to freezer to set.

Step 5 of 5

To serve, place two scoops of ice-cream into cones and sprinkle with extra chocolate.
