  • 300milliliter thickened cream
  • 1 cup milk
  • 20grams butter
  • 80grams ice cream wafers
  • 1 vanilla bean
  • 1/2teaspoons ground cinnamon
  • 1/3 cup maple syrup
  • 2tablespoons maple syrup
  • 1/2 cup pecan halves
  • 4 free range egg yolks

Method

Step 1 of 2

Following the directions for Basic vanilla ice-cream (see recipe), add 1/2 tsp ground cinnamon to cream and milk mixture in Step 1 and replace the sugar with 1/3 cup maple syrup in Step 2. Continue recipe as directed. Meanwhile, line a plate with baking paper. Heat 20g butter and 2 tbs maple syrup in a non-stick frying pan over medium heat until mixtures starts bubbling. Add 1/2 cup pecan halves and toss to coat. Stir for 3 minutes or until toasted. Transfer to plate and set aside to cool and set. Chop finely. Stir through ice-cream mixture.

Return to container, seal and freeze overnight or until firm. Slice the ice-cream and arrange between wafers to serve.
