  • 1/4 cup mini choc chips
  • 2tablespoons icing sugar (for dusting)
  • 1/2teaspoons vanilla extract
  • pastry tartlet cases
  • 1 cup smooth ricotta
  • 1/4 cup caster sugar

Method

Step 1 of 4

To prepare filling. blend together ricotta, caster sugar and vanilla in a mixing bowl using a rubber or silicone spatula. Cover and chill for 30 minutes (or until ready to use).

Step 2 of 4

Remove ricotta filling from refrigerator, transfer to a piping bag fitted with a tip (or you can use a large resealable bag and cut the tip of the end).

Step 3 of 4

Pipe filling into pastry cases, sprinkle with chocolate chips and dust with icing sugar. For best results serve within 2 hours.

Step 4 of 4

Store in refrigerator.
