  • 1 1/4 cup self raising flour
  • 1teaspoons mixed spice
  • 2teaspoons cornflour
  • 60grams butter
  • 1/2 cup milk
  • 4tablespoons golden syrup
  • 1 egg
  • 3/4 cup brown sugar
  • 1 1/2 cups vanilla custard (to serve)
  • 1/3 cup cashew spread

Method

Step 1 of 8

Preheat oven to 180°C.

Step 2 of 8

Grease a 6-cup capacity ovenproof baking dish.

Step 3 of 8

Melt butter, cashew spread and syrup in a small saucepan over a low heat until melted and smooth. Remove pan from heat. Whisk in milk and egg.

Combine flour, 1/4 cup of the sugar and mixed spice together in a large bowl.

Step 5 of 8

Pour in butter mixture and stir well to combine. Transfer to baking dish and smooth top.

Step 6 of 8

Combine remaining sugar and cornflour in a bowl. Scatter over the top of pudding mixture.

Step 7 of 8

Place syrup in a jug and stir in 11/2 cups of boiling water until syrup dissolves. Gently pour over pudding. Bake for 40 minutes until set. Scoop into serving dishes.

Serve with custard.
