Rhubarb & Apple Crostata

- 2 cup plain flour
- 200grams butter, chopped
- 2 pink lady apples
- 1 bunch rhubarb, trimmed
- 1/4teaspoons allspice
- 1/2teaspoons ground cinnamon
- 1/2 cup whipped cream (to serve, optional)
- 1/2 cup caster sugar (save 1/4 cup for later)
- 1/2 cup almond meal
Method
Step 1 of 4
Reserve 1/4 cup flour. Process remaining flour, almond meal and caster sugar in a food processor for 30 seconds. Add 160g of the butter and process until mixture resembles breadcrumbs. Add 1 tbs of chilled water and process until mixture comes together, adding more chilled water, 1 tsp at a time, until a dough forms. Turn onto a lightly floured surface and knead until smooth. Shape into a round disc. Enclose in plastic wrap and chill for 30 minutes

Preheat oven to 200°C. Place a large baking tray in the oven to heat. Slice rhubarb into 3cm pieces and place in a bowl. Peel, core and dice apples and combine with rhubarb. Set aside.

Process reserved flour, extra sugar, cinnamon and allspice in a food processor until combined. Add remaining 40g butter and pulse until a crumble mixture forms.
Step 4 of 4
Roll out dough between 2 sheets of baking paper to a 35cm circle. Pile fruit mixture on centre, leaving a 5cm border. Fold border over to partly cover filling. Sprinkle crumble mixture over centre. Transfer, on paper, to hot oven tray. Bake for 35 minutes or until crisp. Serve warm with cream.
