Mini Apple & Pecan Tarts

10 Ingredients
- 1 cup plain flour
- 2tablespoons icing sugar
- 75grams butter, cold, chopped
- 4 apples, peeled, cored, finely diced
- 1teaspoons ground cinnamon
- 2teaspoons lemon, zest finely grated
- 1/4 cup golden syrup
- 1 cup pecans
- 2tablespoons water
- 1/3 cup brown sugar
Method
Step 1 of 4
Coarsely chop half the pecans and set aside. Process remaining pecan in a food processor until finely ground. Add flour and sugar and pulse. Add butter and pulse again until crumbs form. Add water and process until mixture starts to clump together. Transfer to a bowl and quickly knead until mixture is smooth and firm. Wrap in plastic and chill for 30 minutes.

Meanwhile, place apple in a medium non-stick frying pan. Add 1/3 cup water and brown sugar. Bring to the boil and reduce heat to low. Cook, stirring occasionally, for 8-10 minutes or until apple is tender and liquid has evaporated. Remove from heat and stir in lemon zest, cinnamon and reserved chopped pecans. Set aside to cool completely.

Preheat oven to 180°C. Roll out pastry between 2 sheets of baking paper until 5mm thick. Cut 10x8cm circles from the pastry, re-rolling if necessary. Line 10 holes of a 1/3-cup-capacity muffin pan. Chill for 15 minutes. Fill with apple mixture. Bake for 18-20 minutes or until pastry is golden and cooked. Cool slightly before carefully removing from pan.

Drizzle with golden syrup. Serve warm or at room temperature.
