Baked Apple & Raspberry Shortbread Crumble

- 5 large granny smith apples, peeled, cored, sliced
- 1 cup frozen raspberries
- ice-cream (to serve)
- caster sugar
- 1 shortbread mix
Method
Step 1 of 4
Preheat oven on 180°C and prepare baking dish. Follow shortbread mixture as per instructions on mixture. Place shortbread dough into the freezer while you prepare the fruit.

Once apple has cooled, place into a large bowl. Place on medium heat and bring to the boil. Reduce heat and simmer for 5 minutes. Drain and cool.
Step 3 of 4
Transfer apple to a large bowl. Add raspberries and sugar. Gently stir to combine. Transfer to a 5-cup capacity baking dish.
Step 4 of 4
Coarsely grate frozen shortbread dough and sprinkle over fruit. Bake for 15-20 minutes or until golden and crisp. Serve warm or cold with thick cream or ice-cream.
