  • 700grams apples, peeled, cored, sliced
  • 250grams fresh strawberries, sliced (to serve)
  • 1teaspoons ground cinnamon
  • 1/4teaspoons ground nutmeg
  • 2 cups vanilla custard (to serve)
  • 1/2 cup water
  • 3 eggs
  • 1/2 cup caster sugar
  • 125grams cake crumbs (from any cake)

Method

Step 1 of 3

Add the apples to a medium saucepan with 1/2 cup water. Stew over medium heat for 10-12 minutes or until soft.

Step 2 of 3

Separate eggs. Beat yolks with sugar until thick. Stir in cinnamon, nutmeg, cake crumbs and apple. Whisk egg whites until peaks form.

Step 3 of 3

Stir into apple mixture. Spoon into a greased (6-cup capacity) pudding basin. cover with baking paper and secure with string. Place in a saucepan. Add enough boiling water to reach halfway up the side of the basin. Cook, covered, over low heat for 1 hour or until a skewer inserted into centre comes out clean. Turn out. Top with custard and strawberries. Serve.
