For the cobbler
  • 225grams self-raising flour
  • 2teaspoons baking powder
  • 75grams caster sugar
  • 1 pinch salt
  • 1/2-3/4teaspoons ground cinnamon (to taste)
  • 75grams unsalted butter
  • 1 egg
  • 1/3 cup buttermilk
  • 1tablespoons soft light brown sugar
For the filling
  • 1kilograms plums, stoned and halved
  • 50grams soft light brown sugar
  • 1teaspoons cinnamon
  • 25grams unsalted butter, chilled and diced
  • 282grams ice cream (to serve)

Description

Use brown sugar and cinnamon to add a sweet, dark, spicy flavour to really ripe plums. Cobblers are quick to make, but to speed things up even more use a food processor to make the crumbs for the cobbler dough.

Method

Step 1 of 4

Preheat the oven to 190°C. Toss the plum halves with the sugar and cinnamon. Put them in the dish and dot with the butter.

Step 2 of 4

To make the cobbler, sift the flour, baking powder, caster sugar, salt, and cinnamon into a bowl. Rub in the butter until the mixture resembles fine crumbs. Whisk together the egg and the buttermilk. Add the liquid to the dry ingredients, and bring it together to form a soft, sticky dough.

Step 3 of 4

Drop heaped tablespoonfuls of the dough over the surface of the fruit, leaving a little space between them. Sprinkle with the soft light brown sugar.

Step 4 of 4

Bake in the centre of the preheated oven for 30 minutes or until golden and bubbling. The cobbler is ready when a skewer inserted into the centre of the topping comes out clean. Leave to cool for at least 5 minutes before serving with ice cream.
