- 3 sheets frozen puff pastry (thawed)
- 2 small ripe Packham pears
- 1tablespoons lemon juice
- whipped cream (to serve)
- 2tablespoons maple syrup, plus extra to serve
- 1/2 cup thick vanilla custard
- 1/2 cup almond meal
Method
Step 1 of 5
Preheat oven to 220°C. Line a large baking tray with baking paper.
Step 2 of 5
Cut sides from pears and discard cores. Thinly slice and fan out on a plate. Drizzle with 1 tbs syrup and juice. Set aside for 5 minutes. Drain.
Step 3 of 5
Meanwhile, halve pastry sheets and layer 2 halves on top of each other. Using a 12cm round cutter, cut 2 rounds from each pastry stack. Place on tray. Gently press a 9cm round cutter into each pastry stack, and cut through top layer only to make a border.
Step 4 of 5
Combine almond meal and custard in a bowl. Spoon evenly over pastry inside the border. Top with pear, fanning them out. Brush with remaining syrup.
Step 5 of 5
Bake for 18 minutes or until pastry is puffed and golden brown. Serve topped with whipped cream and extra syrup.
