  • 2 large pears , skin on (i use william bartlett)
  • 1tablespoons unsalted butter , melted (for pears)
  • 2tablespoons pecans, chopped, toasted
  • 2/3 cup cream
  • 3/4 cup brown sugar, firmly packed
  • 50grams unsalted butter , cubed (for sauce)
  • 3teaspoons vanilla

A rich delicious Sauce served over char grilled Pears. A decadent after Dinner treat.

Method

Step 1 of 6

Gather all ingredients together.

Step 2 of 6

To toast pecans - in a small frying pan on medium heat, add pecans and toast for about 2 minutes or until fragrant and nicely toasted, remove and set aside to cool.

To make butterscotch pecan sauce - into a medium heavy base pan or pot on medium heat, add cream, brown sugar, butter and vanilla. Stir for about 2 minutes or until well combined. Increase heat to high, bring to the boil, reduce heat to low and simmer uncovered stirring often for about 5 minutes or until thickened slightly. Remove from heat to cool. Once it reaches the  room temperature, add toasted pecans and stir to combine. Set aside.

To cook pears - heat a griddle pan on medium to high heat. Slice pears in half, and with a small, sharp knife cut out core in a circular fashion and also remove the little bottom end of the pear. Slice each half into a 2 cm slice length ways (don't discard the little cheeks, I eat those fresh) . Brush both sides with the melted butter, add to griddle pan, cook for about a minute or until you have char marks on the pears, turn over and repeat the process. Remove from pan and cool to room temperature.

To serve - add 2 slice of pears to each serving plate, drizzle with the butterscotch pecan sauce (don't hold back now!!)

Can also serve with fresh whipped cream or your favourite ice cream and extra pecans on the side if desired........Enjoy!
