- 6 egg yolks
- 3/4 cup caster sugar (save 1/3 cup caster sugar)

Method
Step 1 of 4
Preheat oven to 160°C. Place cream and vanilla into a saucepan over a low heat. Bring to a gentle simmer. Remove from heat, cover surface with baking paper and set aside to cool.

Using electric beaters, beat egg yolks and sugar until thick and creamy. Slowly add cooled cream, whisking constantly until well combined.

Put 6 x 1/2 cup capacity ramekins into a deep roasting pan. Divide blueberries between dishes. Strain cream mixture into a large jug. Gently pour into ramekins. Pour boiling water into roasting pan until water comes half way up the sides of ramekins. Bake on bottom shelf of oven for 40 minutes or until custard is almost set. Custards should still have a slight wobble. Remove dishes from pan and cool. Cover with plastic wrap and refrigerate overnight.
Step 4 of 4
Sprinkle extra sugar over each custard. Place dishes into a roasting pan and surround dishes with ice. Place under a hot grill for 1-2 minutes or until the sugar melts and turns to toffee. Set aside to cool slightly before serving.
