- 1teaspoons cinnamon sugar (save 1/2 to serve)
- 1 lemon, 1 tsp rind finely grated
- 1/3 cup cream cheese, at room temperature
- 3packets tartlet cases (6 in each)
- 1/2 cup ricotta
- 2 egg yolks
- 2tablespoons caster sugar
- 1/4 cup almond meal
- 2tablespoons sultanas, chopped

Method
Step 1 of 4
Preheat oven to 160°C. Place the tartlet cases onto 2 baking trays.
Step 2 of 4
Add egg yolks and sugar to a food processor. Process until mixture is pale and creamy. Transfer to a small bowl.
Step 3 of 4
Add cream cheese, lemon rind and sugar to processor and process until smooth and creamy. Add ricotta and process until well combined. With motor running, gradually pour in egg mixture. Add almond meal and sultanas. Pulse to just combine.
Step 4 of 4
Fill tartlet cases with cream cheese mixture. Bake for 15 -20 minutes until set. Remove and sprinkle with extra cinnamon sugar. Serve.
