- 60grams butter, chopped
- 1/2teaspoons vanilla extract
- 2tablespoons espresso style coffee
- 2/3 cup raw caster sugar
- 2 eggs
- 150grams hazelnuts

Method
Step 1 of 5
Preheat oven to 180° C. Place hazelnuts on a baking tray and roast for 10 minutes. Transfer to a clean tea towel and rub vigorously to remove skins. Return to tray and bake for 5-10 minutes until golden. Transfer to a bowl.
Step 2 of 5
Place plain flour, raw caster sugar, espresso style and baking powder in a food processor and process to combine.
Step 3 of 5
Add chopped butter and process until mixture resembles breadcrumbs. Add eggs and vanilla extract. Process until a ball forms.
Step 4 of 5
Turn onto a floured surface. Add hazelnuts and knead in. Divide dough in half and shape each into a 20cm log. Transfer to a lined tray. Bake for 30 minutes. Remove from oven and cool for 20 minutes.
Step 5 of 5
Reduce oven to 160°C. Cut logs into 1cm-thick slices. Transfer to tray. Bake for 30 minutes. Cool. Serve with coffee.
