For the filling
  • 1 lemon, juice only
  • 875grams Granny Smith apples, peeled, cored and cut into cubes
  • 150grams caster sugar (or to taste)
  • 500grams blackberries
  • 1/4teaspoons salt
  • 225grams plain flour (save 10g for dusting)
  • 1 1/2tablespoons caster sugar
  • 45grams white vegetable fat, chilled and cut into cubes
  • 60grams unsalted butter, chilled and cut into cubes

Description

Traditionally, cooking apples are used here, but sweet Granny Smiths give a good flavour to this pie.

Method

Step 1 of 4

Sift the flour, sugar, and salt into a bowl. Add the lard and butter, and rub together until crumbs form. Sprinkle water over, 1 tbs at a time, stopping as soon as clumps form. Press lightly into a ball, wrap in cling film, and chill for 30 minutes.

Step 2 of 4

Put the apples in a bowl, add the lemon juice and all but 2 tbs of the sugar, and toss. Add the blackberries and toss again.

Step 3 of 4

Roll out the dough on a floured surface. Cut off a 2cm strip that will reach around the rim of a 1 litre pie dish. Roll the rest out to 7.5cm larger in diameter than the dish. Place a pie funnel or upturned ovenproof cup in the dish. Spoon the fruit around.

Step 4 of 4

Moisten the rim of the dish with water and press on the strip of pastry. Brush it with water and press on the pastry top. Cut a hole over the funnel and trim the edges. Chill for 15 minutes. Preheat the oven to 190°C (Gas 5). Bake for 50-60 minutes. Sprinkle with the remaining sugar to serve.
