  • 300milliliter thickened cream
  • 300milliliter milk
  • 3teaspoons gelatine powder
  • 100grams white chocolate, chopped
  • 1/3 cup brown sugar
  • 1teaspoons vegetable oil
  • 150grams seedless white grapes
  • 1 cup sauternes-style dessert wine

Method

Step 1 of 4

Lightly grease 6 x 1/2 cup moulds with the vegetable oil. Sprinkle gelatine over 1 1/2 tablespoons boiling water in a small jug. Stir until gelatine dissolves.

Step 2 of 4

Combine cream, milk, chocolate and 2 tablespoons of the sugar in a small saucepan. Stir over medium heat until smooth. Stir gelatine into cream mixture. Divide mixture evenly between moulds. Cover and refrigerate until set.

Step 3 of 4

Meanwhile, combine wine and remaining sugar in a small saucepan and bring to the boil. Reduce heat, simmer, uncovered, without stirring, for about 10 minutes or until syrup reduces by a third. Add grapes and cool.

Step 4 of 4

Run a knife around the inside of the moulds and turn panna cotta out onto serving plates. Spoon over grape sauce.
