- 400grams apricots in syrup
- 200grams pastry sheet, thawed
- 60grams caster sugar
- 40grams unsalted butter
- 1teaspoons allspice
- 1/3 cup whipped cream
- 1teaspoons vanilla extract
Description
A simple one pan dessert with a creamy fruit filling and a crunchy topping.
Method
Step 1 of 8
Pre-heat the oven to 180°C/160°C fan-forced.
Step 2 of 8
In a saucepan on a medium heat, melt the butter and sugar for 3 minutes until the sugar has melted completed.

Add 3 tablespoons of the syrup from the apricots into the pan and allow to cook for 1 more minute,.
Step 4 of 8
Remove the apricots from the tin and slice them before placing on the base of a 6 inch or suitable cake tin.

Sprinkle the apricots with all spice and pour the warm sauce over them evenly.
Step 6 of 8
Roll out the pastry and cover the apricots with the pastry, pierce with a fork numerous times before baking for 25 minutes.

Once cooked, remove from the oven and flip upside down onto a serving dish.
Step 8 of 8
Whip the cream with the vanilla and serve with the tarte tatin.
