Description

This sorbet has all the flavour and texture of a creamy chocolate ice cream.

Method

Step 1 of 4

Prepare the ice-cream maker as per the instructions. Heat the sugar and 700ml water in a saucepan over a low heat, stirring occasionally, until the sugar dissolves. Increase the heat to medium and simmer for a further 5 minutes. Remove from the heat.

Step 2 of 4

Start adding the chocolate to the pan, a little at a time. Whisk the mixture vigorously after each addition, to incorporate the chocolate into the syrup. Repeat until all the chocolate has been added.

Step 3 of 4

Add the honey and salt to the mixture, and whisk to combine. Pour the syrup into a large heatproof bowl. Leave to cool completely, then chill until cold.

Step 4 of 4

Pour the mixture into the ice-cream maker and churn for 30-40 minutes, as per the instructions. Once churned, transfer the sorbet to an airtight container and freeze for 3-4 hours, or preferably overnight. Serve in chilled bowls.
