- 600milliliter thickened cream
- 4 eggs, separated
- 1/3 cup white sugar
- 1/4 cup full cream milk powder
- 2tablespoons water, boiling

Description
The flavours of Thanksgiving in an ice cream. No churn is needed.
Instruction tip
Time can obviously be reduced if you combine steps - eg roasting seeds while cooking pumpkin.
Method
Step 1 of 11
Make the pumpkin pie spice mix: Place cinnamon, ginger, cloves and nutmeg into a small jar. Put the lid on and shake until combined.

For the pumpkin puree: Peel, de-seed and cut pumpkin into 2cm cubes. Boil or steam until soft. Drain well and blend until smooth. Leave to cool.

Wash the pumpkin seeds and remove all pumpkin flesh. Dry then toss in a little oil and salt. Roast until golden and popping. Let cool.

To 1 cup of pumpkin puree add 1/4 cup brown sugar and 1 teaspoon of pumpkin pie spice mix.

In a medium bowl eat the egg whites until soft peaks form. Gradually add 1/2 cup of white sugar and beat until thick.

In a large bowl beat the cream until it is thick.

Place egg yolks, milk powder and 1/4 cup white sugar in a small mixing bowl. Start beating on slow speed and add boiling water. Beat on high speed for 6 minutes.

Scrape egg white mixture, egg yolk mixture and pumpkin mixture into the beaten cream. Fold gently to combine.

Transfer into a 2L container with a lid. Freeze until solid.

Serve with the toasted pumpkin seeds.
