Description

Ukrainian crepes are extremely thin and traditionally rolled up with a cottage cheese filling and baked for an indulgent breakfast.

Method

Step 1 of 4

Place 4 whole eggs in a large bowl and beat with an electric hand mixer until frothy. Add milk, 6 tablespoons of water, flour and salt and mix until smooth.

Step 2 of 4

Heat butter in a non-stick pan on medium heat and add a tablespoon of batter, swirling to coat the pan. Cook for 1 minute on one side only and remove from the pan, do not flip. Repeat with the remaining butter and batter to make 12 crepes. Place in the oven at 120°C to keep warm.

Step 3 of 4

Add the cottage cheese to a cheesecloth and squeeze out excess moisture over the sink. Tip the cottage cheese into a large bowl and stir in the egg yolks, cream and dill and mix well.

Step 4 of 4

Remove the crepes from the oven and increase the heat to 175°C. Fill each crepe with the cottage cheese mix on the uncooked side, tuck in the ends and roll up tightly. Arrange each rolled crepe in a buttered baking dish and dot with butter on top. Bake for 20 minutes and serve with sour cream and dill on top.
