  • 400grams plain flour (plus extra for dusting)
  • 1teaspoons fine salt
  • 2teaspoons baking powder
  • 50grams caster sugar
  • 1teaspoons caraway seeds
  • 50grams unsalted butter, chilled and diced
  • 100grams raisins
  • 2/3 cup buttermilk
  • 1 egg

Description

This classic sweet bread can be ready for an afternoon snack in no time.

Method

Step 1 of 4

Preheat the oven to 180°C. In a large bowl, mix together the flour, salt, baking powder, caster sugar, and caraway seeds (if using). Rub in the butter until the mixture resembles fine crumbs. Add the raisins and mix well.

Step 2 of 4

Whisk the buttermilk and the egg. Make a well in the centre of the flour mixture and pour in the buttermilk mixture, slowly stirring until it is all incorporated. You will need to use your hands at the end to bring the mixture together to form a loose, soft dough.

Step 3 of 4

Turn the dough out onto a lightly floured surface and knead it briefly until smooth. Shape it into a round, about 15cm in diameter, and slash the top with a cross to allow the bread to rise easily when baking.

Step 4 of 4

Place the dough on a baking tray lined with baking parchment and cook in the middle of the oven for 50-55 minutes until well risen and golden brown. Transfer to a wire rack and let it cool for at least 10 minutes before serving.
