  • 1tablespoons maple syrup
  • 3/4 cup low-fat milk
  • 2 cup low-fat ricotta (to serve)
  • 1 1/3 cup buckwheat flour
  • 2 eggs

Method

Step 1 of 4

Place eggs, milk, maple syrup and orange zest in a mixing bowl and whisk to combine.

Step 2 of 4

Add flour and baking powder and mix gently to combine.

Step 3 of 4

Heat a nonstick frying pan over medium heat and spray with olive oil. Pour 1/4 cup batter into the pan per pancake and cook for 2 minutes or until bubbles start appearing on the surface. Flip and cook for a further minute or until cooked through. Repeat with remaining batter.

Step 4 of 4

Serve with berries, yoghurt and honey.
