  • 1 2/3 cup water
  • 100grams caster sugar
  • 1 stalk cinnamon
  • 1 star anise
  • 1teaspoons allspice
  • 1tablespoons ginger, diced
  • 2 medium mango, peeled, de-seeded and chopped
  • 1/3 cup vegan whipping cream
  • 1tablespoons icing sugar
  • 1/2teaspoons nutmeg

Description

Enjoy this fun and tasty spiced mango recipe.

Method

Step 1 of 6

In a large sauce pan on a medium heat add the water, star anise, allspice, star anise, cinnamon, sugar and mango.

Step 2 of 6

Cook until the sugar has melted, then lower the heat and allow to simmer for 15 minutes until the sauce starts to reduce, stirring occasionally.

Step 3 of 6

After 15 minutes you can remove the nectarines from the pan and place into your serving dish.

Step 4 of 6

Allow the sauce in the pan to keep cooking to reduce further.

Step 5 of 6

While the sauce is reducing, whip the cream with the icing and nutmeg until fluffy.

Step 6 of 6

Add the cream to the top of the stew nectarines and then drizzle some of the reduced sauce over the top before serving removing the star anise and cinnamon.
