- 3 large red plums, pitted
- 2/3 cup 100% pure coconut water
- 1/3 cup coconut yoghurt

Method
Step 1 of 2
Chop plums and process in a small food processor until finely chopped. Add coconut water and process until smooth. Spoon half the mixture into 6 x 1/3 cup-capacity iceblock moulds until they are one-third full. Freeze for 1 hour.
Step 2 of 2
Remove moulds from freezer and spoon coconut yoghurt evenly into each mould. Freeze for a further 1 hour until just set. Insert sticks into yoghurt layer then finish with remaining plum mixture. Freeze for 3 hours or overnight until firm. To serve, remove iceblocks from moulds.
