- 1/2 cup tapioca
- 2 cup reduced-fat milk (standard milk can be used)
- 1/2 cup white sugar
- 250grams unsalted butter
- 3 medium sized bananas, sliced diagonally
- 1/4 cup shredded coconut, toasted
- 1 cup light coconut milk (standard coconut milk can be used)
- 1/4 cup grated palm sugar (or brown sugar)

Method
Step 1 of 4
Combine tapioca and milk in a saucepan. Cover and stand for 2 hours. Place saucepan over a medium heat and bring to the boil. Reduce heat and simmer for 10-15 minutes or until tapioca is translucent. Add sugar and stir until dissolved. Remove from heat.
Step 2 of 4
Melt the butter in a frying pan over medium heat. When butter is sizzling, add sugar and stir for 1-2 minutes or until dissolved.
Step 3 of 4
Add bananas and cook for 2 minutes or until light golden and tender. Turn and cook for a further minute. Stir in coconut milk until well combined.
Step 4 of 4
Spoon tapioca into bowls, top with bananas and sauce. Serve with toasted coconut.
