- 3tablespoons MasterFoods Cajun Spice Blend, divided
- 3tablespoons MasterFoods Traditional Tartare Sauce
- 3tablespoons extra virgin olive oil, divided
- 4 salmon fillet (About 460g)
- 1 bunch asparagus spears, trimmed
- 1 lemon, halved
- 320grams assorted baby tomatoes, halved
- 1/2 small red onion, thinly sliced
- 1 cucumber, chopped
- 200grams fresh mozzarella, torn into large chunky pieces
Method
Step 1 of 4
Preheat the oven to 200°C/180°C fan-forced. In a small bowl, combine 1 tbsp of MasterFoods Cajun Spice Blend with the tartare sauce and mix to combine, then set aside until needed.
Step 2 of 4
Drizzle the first 1 tbsp of olive oil over the salmon fillets and coat with the remaining 2 tbsp of Cajun Spice Blend, then place on a roasting tray lined with baking paper. Cook salmon in the oven for 8-10 minutes and while this is happening, set a grill pan or barbecue over medium-high heat.

Drizzle the second 1 tbsp of olive oil over the asparagus and season with salt. Grill, along with the lemon halves on the cut side down, for 2-4 minutes or until nicely charred. Set aside to cool slightly once done.
Step 4 of 4
Toss together prepared vegetables with the final 1 tbsp olive oil and season to taste. Smear a serving platter or plates with the Cajun tartare and top generously with the seasoned vegetables. Place torn pieces of mozzarella in random places and top with the cooked salmon. Drizzle over the juice from the charred lemon and serve alongside the grilled asparagus.
