  • 1 cup frozen edamame
  • 2/3 cup Woolworths sour cream
  • 1/3 cup mayonnaise
  • 2teaspoons horseradish cream
  • 1tablespoons lemon juice
  • 2 bunches red radishes, scrubbed, thinly sliced into rounds
  • 60grams baby spinach leaves
  • 2 Lebanese cucumber, cut into ribbons
  • 1/2 cup wasabi peas, coarsely crushed
  • 10grams pink Himalayan salt seaweed chips
  • 1tablespoons sesame oil

Description

Serve this bright, refreshing, simple radish and edamame salad on special occasions to impress loved ones at Christmas.

Swap tip:

Wasabi peas are slightly spicy. If you’re not a fan of heat, you can also use toasted sesame seeds or fried shallots.

Method

Step 1 of 3

Cook edamame in a saucepan of boiling water for 5 minutes or until bright green and tender. Drain, refresh under cold running water. Drain.

Step 2 of 3

Whisk sour cream, mayonnaise, horseradish and lemon juice. Spoon onto a large serving plate. Top with edamame, radish, spinach and cucumber.

Step 3 of 3

Sprinkle salad with wasabi peas and seaweed. Serve topped with freshly ground black pepper and drizzled with sesame oil.
