- 1 cup frozen edamame
- 2/3 cup Woolworths sour cream
- 1/3 cup mayonnaise
- 2teaspoons horseradish cream
- 1tablespoons lemon juice
- 2 bunches red radishes, scrubbed, thinly sliced into rounds
- 60grams baby spinach leaves
- 2 Lebanese cucumber, cut into ribbons
- 1/2 cup wasabi peas, coarsely crushed
- 10grams pink Himalayan salt seaweed chips
- 1tablespoons sesame oil
Description
Serve this bright, refreshing, simple radish and edamame salad on special occasions to impress loved ones at Christmas.
Instruction tip
Swap tip:Wasabi peas are slightly spicy. If you’re not a fan of heat, you can also use toasted sesame seeds or fried shallots.
Method
Step 1 of 3
Cook edamame in a saucepan of boiling water for 5 minutes or until bright green and tender. Drain, refresh under cold running water. Drain.
Step 2 of 3
Whisk sour cream, mayonnaise, horseradish and lemon juice. Spoon onto a large serving plate. Top with edamame, radish, spinach and cucumber.
Step 3 of 3
Sprinkle salad with wasabi peas and seaweed. Serve topped with freshly ground black pepper and drizzled with sesame oil.
