- 2 lemons
- 1/4 cup extra virgin olive oil
- 1/2 cup macadamia nuts
- 120grams pkt baby leaf rocket
- 2 large avocados, sliced
- 1/3 cup shaved parmesan
Description
Served with a drizzle of lemon and sprinkle of parmesan, this easy green salad makes a great accompaniment to any main dish, or serve by itself for a refreshing, crunchy bite.
Method
Step 1 of 3
Preheat oven to 180°C/160°C fan-forced. Line a baking tray with baking paper. Cut 1 lemon into 3mm-thick slices, then toss with 1 tbs oil and season. Arrange, in a single layer, on prepared tray. Bake for 15 minutes, turning halfway, or until caramelised. Transfer to a plate and set aside to cool.

Re-line tray with baking paper. Scatter macadamias over tray. Bake for 5 minutes or until toasted. Remove from oven and set aside to cool. Coarsely chop.
Step 3 of 3
To make dressing, juice remaining lemon and whisk with remaining oil in a small bowl until combined. Season. Combine rocket, lemon slices and half of the dressing in a large bowl. Top with avocado and macadamias. Drizzle over remaining dressing. Serve sprinkled with parmesan.
