  • 250grams seedless watermelon, peeled, sliced into thin wedges
  • 150grams cherry tomatoes, core removed, sliced
  • 1/4 medium red onion, peeled, sliced thinly
  • 1 small cucumber, peeled, sliced thinly
  • 8 leaves red leaf lettuce, washed, dried, chopped
  • 2tablespoons apple cider vinegar
  • 1teaspoons honey
  • 4tablespoons olive oil
  • 1 small lemon, juiced
  • 1 medium avocado, peeled, pitted, sliced
  • 1 pinch salt
  • 1 pinch pepper

Description

Warm hot smoked salmon is flaked and added to a flavorful, healthy watermelon, tomato, cucumber and avocado salad for a refreshing and simple salad.

Method

Step 1 of 4

Preheat the oven to 200°C. Wrap the smoked salmon in foil placing it onto a baking sheet and into the oven to warm for 10 minutes. Remove the fish from the foil, placing it onto a plate. Flake the fish using a fork, keep warm until ready to add to the salad.

Step 2 of 4

Add the watermelon, sliced tomatoes, onions, cucumbers and lettuce together in a bowl.

Step 3 of 4

Whisk the apple cider vinegar together with the honey, olive oil and lemon juice, season with salt and pepper. Add the dressing to the bowl of salad ingredients tossing everything to coat.

Step 4 of 4

Arrange the salad into bowls garnish the top with warm flaked smoked salmon and slices of avocado before serving.
