- 150grams baby rocket leaves
- 12 medium fresh figs, stems removed, cut into quarters
- 3 small plums, halved, stones removed, sliced
- 25grams candied almonds, ready made
- 100grams goats cheese, crumbled
- 2tablespoons balsamic vinegar
- 1teaspoons honey
- 4tablespoons olive oil
- 1 small lemon, juiced
- 1 pinch salt
- 1 pinch pepper
Description
A simple salad that is sure to impress, fresh figs and plums work perfectly with goats cheese, candied almonds and a quick balsamic vinaigrette.
Method
Step 1 of 2
Arrange the rocket into the bottom of a salad bowl or serving dish. Arrange the figs, sliced plums, almonds and goats cheese on top of the rocket.
Step 2 of 2
Whisk the balsamic vinegar together with the honey, olive oil and lemon juice, season with salt and pepper. Drizzle the vinaigrette over the salad right before serving.
