  • 2tablespoons olive oil
  • 2tablespoons dry barbecue seasoning
  • 225grams halloumi cheese, cut into bite sized pieces
  • 1/2 red onion, peeled, cut into bite sized pieces
  • 1 red capsicum, veins and deseeded, cut into bite sized pieces
  • 1 mango, peeled, diced into bite sized pieces.
  • 5milliliter non-stick cooking spray
  • 2tablespoons Italian parsley, leaves, chopped

Description

A fun new twist on traditional barbecue offerings that can be used as a side dish, appetizer or as a topping for a crunchy salad.

Method

Step 1 of 5

Mix the olive oil and barbecue seasoning together in a bowl, add and coat the cheese, vegetables and mangoes with the flavoured oil.

Step 2 of 5

Allow all the ingredients to marinade for 1 hour, while soaking the wooden skewers in water.

Step 3 of 5

Arrange the halloumi cheese, vegetables and mangos onto the skewers without overcrowding them. Preheat the grill to medium heat for 10 minutes.

Step 4 of 5

Spray the grill with non-stick cooking spray before adding the skewers to the grill. Cook on each side for 2 minutes brushing the skewers with any leftover barbecue oil until charred.

Step 5 of 5

Remove the skewers from the grill before topping with chopped parsley.
