For the salsa
  • 1 medium mango, peeled, de-cored and finely diced
  • 2tablespoons olive oil
  • 1 medium red onion, peeled and finely diced
  • 1 small red capsicum, de-seeded and finely diced
  • 1 medium lime, juice only needed
  • 1 stalk scallion, finely diced
  • 50grams plain flour
  • 2 medium eggs, cracked and lightly beaten
  • 150grams polenta
  • 4 small barramundi fillets, no skin or bone and sliced into 1 inch bites

Description

Crispy fish bites with a tangy and crunchy salsa.

Method

Step 1 of 6

Prepare the salsa ingredients by chopping and mixing together in a bowl and allow to set while you cook the fish.

Step 2 of 6

You need 3 bowls, 1 you can sift the flour into, the 2nd place the lightly beaten eggs and the polenta in the 3rd.

Step 3 of 6

Place the barramundi pieces in the flour and cover fully, then dip into the egg and finally cover in polenta and set aside.

Step 4 of 6

Shallow fry the breaded fish for 6 minutes turning halfway.

Step 5 of 6

Remove from the heat and allow some of the excess oil to drain on some kitchen paper.

Step 6 of 6

Serve with the mango relish on the side.
