  • 1 white onion, peeled and finely diced
  • 2 cloves garlic, peeled and diced
  • 400grams tomatoes, chopped
  • 3tablespoons balsamic vinegar
  • 1 pinch cracked black pepper
  • 1teaspoons parsley, fresh, for garnish

Tomato based and lightly seasoned oysters.

Method

Step 1 of 4

Prepare the oysters by shucking, draining and rinsing and place open on your serving plate.

Step 2 of 4

Fry the onion and garlic on a non-stick pan set to medium heat for 2 minutes.

Step 3 of 4

Add the chopped tomatoes, balsamic and pepper and allow to simmer for 10 minutes to reduce the sauce.

Step 4 of 4

Pour the sauce equally into the oyster shells before serving.
