- 1/2 cup olive oil
- 12 anchovies, drained and choppedingredient tip
- 5 cloves garlic, peeled and minced
- 120grams butter, chopped into cubes
- 2 large carrots, peeled and chopped into batons
- 2 heads endive, leaves separated
- 2 large capsicums, red and yellow, finely sliced
- 1 bulb fennel, finely sliced
Description
Bagna cauda is a classic Italian anchovy dip, delicious scooped up with bread or crisp vegetable crudites as an entree.
Method
Step 1 of 3
In a pan on low heat, gently heat the oil with the garlic and anchovies for 2-3 minutes.
Step 2 of 3
Whisk in 100g of butter, cooking until melted and incorporated. Remove from the heat and stir in the rest of the butter.
Step 3 of 3
Serve in a bowl surrounded by vegetable dippers.
