Roasted Grape & Mozzarella Bruschetta

- 1tablespoons olive oil
- 500grams red grapes, seedless
- 2tablespoons rosemary, fresh, chopped
- 2 balls mozzarella, torn
- 250grams baguette
- 1 pinch cracked black pepper
Description
Roasting grapes brings out their sweetness, perfect with mozzarella and crisp baguette.
Method
Step 1 of 3
Pre-heat the oven to 200°C/180°C fan-forced. Place the grapes on a baking tray, drizzle with oil and rosemary and roast for 20 minutes on the middle shelf of the oven.
Step 2 of 3
Cut the baguette into bruschetta slices on the diagonal and place these on a baking tray. Bake for 5-6 minutes on the top shelf of the oven until crisp.
Step 3 of 3
Add torn mozzarella to each bruschetta, top with sticky grapes and cracked black pepper and serve.
