- 150grams soft goat’s cheese
- 1 punnet cherry tomatoes, roasted
- 10 leaves mint leaves
- 1 pinch black pepper (to season)

Spread 150g soft goat’s cheese on to one end of the crostini. Place roasted cherry tomato on to the other end and tuck a mint leaf under the tomato. Season with black pepper to serve. For an alternative recipe that plays on the flavors of an Italian tricolore salad, replace the goat’s cheese with a thin slice of buffalo mozzarella, and garnish with a fresh basil leaf. Top the crostini up to 30 minutes before serving.
