For the dressing
- 3/4 cup olive oil
- 3 lemons, juice only
- 1 clove garlic, crushed
- 2teaspoons sumac
- 1 pinch salt
- 1 pinch pepper
- 1 small pitta bread, torn into small pieces
- 6 plum tomatoes, deseeded and roughly chopped
- 1/2 cucumber, peeled and roughly chopped
- 10 radishes, sliced
- 1 red onion, roughly chopped
- 1 small little gem lettuce, leaves separated
- 1 small handful fresh mint leaves
Method
Step 1 of 5
First make the dressing. Whisk the olive oil, lemon juice, garlic and sumac together in a bowl. Season to taste.

To make the salad, combine the pitta pieces, tomatoes, cucumber, radishes, red onion, lettuce leaves and mint leaves in a large bowl.

When ready to serve, pour the dressing over the salad and gently mix together to coat the salad evenly.

Finely dice 4 plum tomatoes, 1/2 cucumber, 6 radishes, 1/2 red onion and place in a bowl with 1 crushed garlic clove, 4 tablespoons olive oil, 2 teaspoons sumac and the juice of 1 lemon. Season and stir to mix well. Allow to stand for 15 minutes. Meanwhile, toast 8 pitta breads until lightly golden and place on to 4 serving plates. Spread 2 tablespoons hummus over each one and then top with the prepared salad. Sprinkle over chopped mint leaves and serve.

Replace the pitta bread in the above recipe with 400 g cooked couscous. Pour over the dressing, toss to mix well and serve.
