  • 1 clove garlic, crushed
  • 4tablespoons lemon juice
  • 3tablespoons olive oil
  • 2tablespoons parsley, chopped
  • 2tablespoons mint, chopped
  • 5 ripe tomatoes
  • 1 cucumber
  • 1 green capsicum
  • 1 red capsicum
  • 1/2 red onion
  • 4 flat breads
  • 2tablespoons olive oil
  • 1 pinch salt
  • 1 pinch pepper

Method

Step 1 of 4

Cut the tomatoes, cucumber, green and red capsicums and onion into 1 cm pieces and put them in a non-metallic bowl.

Step 2 of 4

Cut the flat breads into 1 cm squares. Heat the oil in a frying pan and fry the bread in batches. Drain on kitchen paper and allow to cool.

Step 3 of 4

Make the dressing by whisking together the garlic, lemon juice, oil, parsley and mint.

Step 4 of 4

Pour the dressing over the vegetables, toss carefully and season to taste with salt and pepper. Garnish with the croûtons and serve immediately.
