For the dressing
  • 1/2 lemon, grated zest
  • 5tablespoons olive oil
  • 1 handful flat leaf parsley, chopped
  • 2tablespoons capers, drained and rinsed
  • 1 pinch black pepper
  • 24 vine-ripened cherry tomatoes
  • 200grams mixed capsicums in olive oil, (from a jar, drained and sliced
  • 100grams rocket leaves
  • 2 packs haloumi, sliced, x 200 g each
  • 2tablespoons lemons, juice

Method

Step 1 of 4

First make the dressing. Whisk together the lemon zest and juice, olive oil, parsley, capers and black pepper, then set aside.

Step 2 of 4

Halve the tomatoes and divide among 4 plates, along with the capsicums and rocket.

Step 3 of 4

Place the slices of haloumi on a preheated griddle pan and place under a preheated medium grill. Cook for 2-3 minutes on each side until just beginning to warm and soften.

Step 4 of 4

Transfer the warm haloumi to the plates, drizzle with the dressing and serve immediately.
