For the dressing
- 6tablespoons mayonnaise
- 1 lemon
- 1teaspoons clear honey
- 1tablespoons wholegrain mustard
- 3tablespoons dill
- 3tablespoons chives
- 1 pinch salt
- 1 pinch pepper
- 300grams baby potatoes
- 2 oranges
- 2 red dessert apples
- 100grams green and red seedless grapes
- 2 celery stalks
- 6 spring onions
- 4 large gherkins
Method
Step 1 of 3
First make the dressing. Mix together all the ingredients in a bowl and season to taste.
Step 2 of 3
Cook the potatoes in boiling salted water for about 15-20 minutes until just tender. Drain and, when just cool enough to handle, cut into halves or quarters if quite large.
Step 3 of 3
Place the potatoes in a mixing bowl with the remaining salad ingredients. Pour on the dressing and toss gently to mix well. Chill the salad until ready to serve.
