- 2 medium apples, cored and chopped into cubes

Description
Goats cheese is even more delicious when baked and served warm in this crunchy and sweet salad.
Method
Step 1 of 3
Pre-heat the oven to 200 °C. Spread the pecans on a baking sheet and place in the oven for 5 minutes to toast. Remove the pecans and add the goats cheese rounds to the baking tray. Drizzle with oil and bake for 5 minutes.
Step 2 of 3
In a large bowl whisk the olive oil, balsamic vinegar, mustard and honey together. Add the leaves and apples and toss well.
Step 3 of 3
Divide the salad between 4 bowls, top each with half a goats cheese round and toasted pecans and serve.
