Ready in 10 minutes, this vibrant Mediterranean-style avocado salad will brighten up your next outdoor gathering. Serve drizzled with balsamic vinegar and extra virgin olive oil.

Step 1 of 1

Cut a 180g block of haloumi in half lengthways, then cut each piece into strips. Cook in a frying pan until golden. Combine haloumi, 2 coarsely chopped Shepard avocados, 2 coarsely chopped vine-ripened tomatoes, 1 small sliced red onion and cup pitted Kalamata olives on a serving platter. Top with bunch basil leaves. Season with pepper. Serve drizzled with 1 tbs balsamic vinegar and 1 tbs extra virgin olive oil.
