  • 2 medium mango, de-seeded, peeled and sliced
  • 50grams hazelnuts, lightly crushed
  • 200grams mixed salad leaves, washed and drained
  • 160grams goat cheese, crumbled
  • 80grams parma ham, torn

A light and refreshing salad with some warm crunchy nuts.

Method

Step 1 of 5

Pre-heat the oven to 180°C.

Step 2 of 5

Place the hazelnuts on a baking sheet and bake in the oven for 10 minutes.

Step 3 of 5

Prepare your dressing by combing the oil and vinegar and set to one side.

Step 4 of 5

Combine the rest of the ingredients in a bowl with the mangos and hazelnuts from the oven.

Step 5 of 5

Serve with the dressing on the side or tossed if you prefer.
