  • 1/2 bunch mint, fresh, chopped
  • 1/2 bunch coriander, fresh, chopped
  • 1 medium lemon, juice and zest
  • 1/2 clove garlic
  • 1 medium cucumber, deseeded and sliced into half moons
  • 1 medium red onion, peeled and finely sliced into half moons
  • 1 medium avocado, peeled, destoned and sliced
  • 12 falafels, ready made
  • 2tablespoons olive oil (to drizzle)
  • 4 pitta breads (to serve)

Description

Ready made falafel makes this salad a speedy and simple lunch option.

Method

Step 1 of 3

Heat the falafels according to pack instructions. Mix the yoghurt, half of the mint and coriander, lemon juice and zest and garlic together in a large bowl, adding a little water to loosen if necessary.

Step 2 of 3

Add the cucumber, avocado and red onion to the yoghurt dressing and toss to coat.

Step 3 of 3

Divide the cucumber salad between 4 plates, top each with falafel, the rest of the chopped herbs and a drizzle of olive oil and serve with warm pitas on the side.
